The glad between their toes is a scent gland. It enables sheep to herf (stay in a per-defined area, without fences). As the sheep walk, the gland scents the grass and ground and the sheep smell it and can smell the borders of the land that they walk on (and stay off the land that that don't. I don't know if all modern sheep breeds are capable of herfing, but I know that some are.
