A Happy rabbit will be relaxed and comfortable.

Often they will lay flopped on one side or with legs up in the air.

They will run, binky (little lamb hops), play with toys etc

They will be eating, drinking and excreting normally

When a bunny really likes something you are doing. i.e. scratching behind the ears etc. they will chatter their teeth in a bunny version of purring.
