Expensive. The dig is probably one of the least expensive parts of the inground pool process. Essentially when you pull the vynal out that is what you have. a hole. You can plan to have the gunite shot in, replumbing, coping and decking. Then the diamon brite plaster is shot at the end. In most markets you can count on approximate costs of over $20,000.

Diamond Brite can be repaired. To repair a surface, cut out the crack 1/2 inch deep and fill it in with caulk. Allow to dry, fill the pool and it's ready to use.
I have personally never heard of "stains" for coloring swimming pools. you can however have your pool resurfaced. there are many different options to do so. My personal favorite is called "diamond brite". it is a prety smooth surface, and is availablr in many different colors!
It all depends on the condition of the current surface. It would be necessary if the pool is currently painted or the old plaster is de-laminating or falling off in spots. A qualified pool plasterer should be able to tell you if the condition of the pool warrants sand blasting. Sometimes all you need to do is apply Bond Kote to help the new Diamond Brite to stick. With a new pool surface installed- Diamond Brite or any aggregate surface- is it possible or doable to acid wash the pool with water in the pool??

The hairline cracks in the Diamond Bright will not cause the pool to leak. You must have got plastered in hot weather and the plaster cured quickly. It is just cosmetic on the surface and not through the entire layer of plaster.
You say that it did not adhere to the original plaster surface. That being said the proper prep work required when plastering over an existing surface was not done properly. Diamond Brite as well as other exposed aggregate finishes would not come off in sheets unless the applied surface was not properly prepped. Without knowing the condition of the existing surface I won't be able to tell you weather the finish should have been sandblasted or if it were structually sound enough that a acid wash, pressure wash and bonding coat would have done the trick.
