I've insulated my pool with 1/8th thick home insulation that is sold in rolls. I used rolls that were 24 feet long and 48 inches high. it was installed between the pool wall and the liner. To attach the insulation I used 2 inch Duct Tape. It also makes the interior of the pool walls softer.

You basically need to protect the pool from freeze damage.
Start by cleaning the pool of all large debris, Lower the water level of the pool. install a plug in the return and an aquador over the skimmer. Test and balance pool water.
Install air pillow, cover with cable and ratchet. Make sure all the water is out of the pump, filter, heater and feeder if they will not be put away to protect from freeze damage.
Gunite and concrete pools can be insulated by resurfacing with fiberglass. Because fiberglass is non-porous, heat is not lost through the plaster finish. If the pool is already fiberglass, there is nothing further that can be done, unless the pool is not yet installed in which case a spray of insulating material can be given to the outside of the fibreglass pool prior to installation.
I see no reason why you would insulate them. When you close your pool for winter you will purge (empty) your pump and pipes. The water in the pool would freeze long before the water will in the pipes under ground.
