Used Gamecube games are very easy to find at Gamestop or various rental chains that sell used games. Nintendo stopped releasing Gamecube games just after the release of the Wii over two years ago. As such, there are no new Gamecube games on the horizon and it is unlikely that any new Gamecube games will ever be released again.
For gamecube theres 128bit.me, haven't had any problems from there so far as long as i stick to the confirmed ok ones. Not sure about wii games.

Nintendo does make some wireless controllers for the GameCube but they're a bit rare these days. Look around online and you may be able to find some.
In order to play imported Gamecube games on any Gamecube you would need to install a modification chip into the hardware itself there is no software that would allow this.
Dolphin runs on Mac OS X, though I don't think there are currently any official packages available, so you have to compile it yourself.
