There is no "face" of Master Chief. Bungie does this on purpose to help keep the player immersed in the series, and make it feel more like it's them fighting the covenant, and not some random guy they never knew about before the games.
The books do briefly mention that he has brown hair, and freckles on his face, but this was when he was only six years old, and has likely changed very much.

No, sorry to disappoint you. That helmet never comes off. According to an interview from the bungie essentials disk, they think master chief goes well as a sort of faceless character because it leaves you to imagine what kind of hero lies inside. Or something like that.
