You can't. You can't really use the Final Smash of any character in Brawl multiple times. Once you have a Smash Ball, the Final Smash is used by pressing the B button. Afterwards, to execute another Final Smash you'll need to break another Smash Ball. However, you can hit multiple enemies with Ike's Final Smash, if you can manage to hit multiple opponents in the initiating slash of the attack. Also, any opponents not caught in the attack but directly under Ike when he plunges back down to the stage will be launched with the other characters.
