You walk up to the chicken and when it's highlighted with the purple "aura" or outline, press A. It should allow you to give that chicken a good kick. Whichever way you're facing is the direction the chicken will go.
Kicking a chicken in front of villagers is not a bad or evil thing but it actually improves your relations with them. Kicking a chicken will cause them to give you +3 Funny points and it decreases by 1 after each time you kick the chicken afterwards, so switch crowds.
This skill is also needed to gain the Chicken Chaser title for free and to get the achievement "The Chicken Kicker", though you have to kick a chicken quite a few times (or kick several chickens) before you can get it.
It is also needed to open a demon door in the Bowerstone Cemetery. You can open the door by kicking a chicken towards the demon door who will open its mouth and let the chicken sail right in. The door will give you potions that will give you Skill and Strength.
