You can't beat Captain Crawfish with the Steaming Fury: you can get close to beating him and then he slips away or gets repaired. You have to get the Phoenix Warbird, and probably the Shipwright and Cannoneer on your crew. It would take a major glitch to beat him with less.
The game is a bit lengthy, what with having to go to each island and get the map piece, and slowly build your worth. Buying the Jimmy Rigger for 3000 (your first actual ship) brings in substantially greater amounts of salvage, and lets you do more trading. Once you have a ship with a cannon, you can hunt Sea Monsters around Dragon Cove -- collecting two or three shiploads is enough to buy the next larger ship, and you can take a load of silk across to Bouffant Bay to make even more. Sticking with a smaller ship just takes longer.
You only need 500,000 doubloons (with no loans out) because you can borrow the other half-million from the Golden Harbor bank.

The problem is that he will stay close to the Pirate Outpost and simply dock there to repair his damage (as you can). You would need to be very lucky, so the usual plan is to fork out the million doubloons for the Phoenix (and hire the Cannoneer). *If you are attacked by Captain Crawfish, one way to hit him is to let him chase you. If you fire cannon shots almost "straight up" (aimed above your own ship), they will fall onto him as he pursues you.
