Get on her and ride over to the bloke. Talk to him and he will ask you if you want to race with that horse say yes and pay the fee. You will then race him twice. Win both the races and he'll let you ride the horse around the ranch. Then go as fast as you while riding epona and run into the fence on the outside (the fence which would lead you into hyrule noy the other one, if you can't work out what I'm on about just run at all the fences) and epona should leap over it. And dada you have epona.
