Most of the time they can commonly be found in swamp biomes, sometimes on the ground randomly in forest or jungle biomes, and can also be found in caves.

Bamboo can be found growing naturally in a Jungle Biomes. Bamboo can be found while Fishing in jungle biomes as a junk item. Bamboo can be found in 50.9% of jungle temple chests in stacks of 1–3. Pandas will drop 0–2 Bamboo when killed.
pumpkins are always available in jungle biomes. you can simply find them by just walking around the jungle. emeralds are way much harder to find.
You cannot make cocoa beans. They spawn naturally in jungle biomes on jungle trees. You can also spawn them via creative mode. Hope this helps.
I would go mining in Extreme Hills biomes, or try to find Desert temples, jungle temples, and villages and they may have some there.
