Spain was a crumbling empire, desperately trying to keep its holdings around the world. At the time (1810), Mexico was the most successful colony it ever had, like today California and Texas are to the United States. By losing Mexico and the remaining territories in the Americas, Spain would effectively cease to be a colonial power.

You should note that when international politics and diplomacy are involved, there are no real friends but different countries with common or diverging interests that more often than not, end up in 'friendly rivalries', contempt or even outright war.

In the specific case of Spain and its former American colonies, this goes more into "friendly rivalry" territory, as all of them are important business and trade partners, only overshadowed by the United States' dominance over the region.

Why do Bolivia Venezuela and Ecuador hate the US?

Bolivia, Venezuela, and Ecuador don't necessarily hate the people of the United States, rather those three countries dislike the U.S government's policies and its meddling in world affairs including that of Latin America. Each of those countries boast their own national sovereignty and wish that no country, including the U.S, should have a greater say in their affairs and should remain diplomatic friends without intervention.
