Aims were largely nationalistic. It was the time of the Italian Wars when many countries in Europe were locked in an almost constant struggle with one another for territory, but with the greater aim of appearing to be superior powers. To conquer a new land, make their people your subjects, and to gain all of the new knowledge that the New World could bring (about flora, fauna and the nature of humanity and our relationship with God) would be to assert the superiority of a nation very strongly. There was also a religious angle in this.
The Holy Roman Empire portrayed themselves as God's chosen nation, with the Emperor standing above all other European rulers. Most of these rulers felt that to conquer new, non-Christian nations, and to convert them to Christianity, would be to do a great service to God, and again to assert that nation's supremacy within Christendom.
The basis of European explorations were to find new undeveloped places where they could establish colonies and take advantage of the Natural Resources that were found in these underdeveloped places. They also made explorations to chart and map out new areas on the earth. This would be of general benefit to them, but also allow them to have a military advantage over other nations that did not accurate information to help their logistics or their military planning.
The three main reasons for European exploration of the New World were to find new trade routes to Asia, to spread Christianity to indigenous peoples, and to seek wealth and resources such as gold and silver.

They explored all continents including Antarctica. They explored Antarctica in the 1900s and explored the rest of the world in 1600s and 1700s. They continents they knew least about were the Americas, Oceania, and Antarctica.
Those who explored North America were searching for the Northwest Passage. Many who explored South America sought gold and silver. A few who explored Central America were searching for a western passage to Asia.
