I suppose you mean Sinterklaas' horse and not house. It is customary to leave a carrot in your shoe as a present for Sinterklaas' horse. Sometimes children also write little poems and leave them in the shoe as well for Sinterklaas himself.
Holland- and the wooden shoes ( Bolzenboot_ or something like that) are used, in real life they are mainly folk custom and ceremonial , though would be watertight- many boats have wooden hulls- and look at the canals in the Netherlands.
