I personally have seen while fishing from a canoe, a mature bald eagle dive into the Stilliguamish river near where it empties into the Puget Sound in Washington state. The eagle hit the water at a good rate and disappeared from view and then took off with about a 5lb salmon. His take off appeared to be unhampered by the water and amazingly took off with the large fish with little trouble. I was amazed and consider it one of the neatest things I have ever seen.
