Technically, you can't "counter" a spell that has already resolved. However, you can render the spell's effects useless afterwards.
The best method would be to use "Quest for Renewal," although it would generally be necessary to have it on the field before your opponent uses "Sleep" (otherwise, you would need to have four green creatures in your hand with haste, and in that situation, having your creatures being already tapped is not the issue). This method would not allow you to attack during your next turn anyway. It would just give you all your creatures to block with again.
Two copies of "Fog" or "Safe Passage" would allow you to survive the next two attacks your opponent will be making until your creatures untap. Of course, "Day of Judgement" would be another option, but that would destroy your creatures as well.
You could also make an unorthodox move and give yourself another turn, using either "Magosi, the Waterveil" (with an eon counter already on it) or "Time Warp" to allow your creatures to untap during your second turn.
Outside of Standard, "Vitalize" is your best option, although any number of cards would have a similar effect. There are simply too many cards to list.
You choose a player to use it on when you cast it. When it resolves, tap all their creatures. When that player next has an untap step, he may not untap any of these creatures. A creature played and tapped after Sleep resolved, may untap in the next untap step. However a creature that was already tapped before Sleep resolved, may not untap. That's because Sleep's effect was applied to it (it affects all their creatures, not just untapped ones), even though it could not physically become tapped by Sleep.
