To use a line graph to make predictions, you have to look at the slope of the line. If there is any sort of pattern to the line, you can make an accurate prediction. For example, if the line steadily dropped, then suddenly spiked down, then started steadily dropping again, you could predict from the pattern that it will suddenly spike downward again.

Which graph do you make a line or bar graph when your science project is about which wrapping will keep the apple slice fresh from rooting?

You would use a bar chart. A line graph is for showing stuff like temperature.

Would a line or bar ever go beyond the limits of the graph?

No, you would change the axis or scale on the graph to fit the line/bar. If you draw a graph you should make sure it is large enough to accommodate any data in which you are going to place in it.
