∙ 10y agoCake decorators decorate cakes. This can be anywhere from allpying icing, to icing details, sprinkles, designs, painting, putting fondant (dry sheets of icing-like coverings) on the cake, spraying it, molding it, or doing anything else to the cake.
The only thing that makes bakery cakes unique is the decorating. Make your favorite cake and then experiment with piping the icing on with a pastry bag.
Practice! I used to practice making roses with a pastry bag and a mini marshmallow on a toothpick. Best part is, since you're not going to eat the icing, you can put the roses back in the pastry bag and start over. Icing can be made from powdered sugar, lard, and food coloring, or you can buy tubes of icing. Practice writing on a cutting board (you can clean it off and re-use the icing). Cake decorating is a lot of fun, and you can practice making flowers, writing, leaves, vines, all of that with very little cost. You don't have to decorate a cake; practice on a box instead. :)

While an icing spatula is often considered an extension of a professional baker's hand, it is not needed for every icing endeavor. If the cake or pastry is not going to be displayed for its artsitic properties, it is perfectly fine to use a regular butter knife or even a spoon to spread icing. It is important to remember that the icing will not be as smooth nor will either utensil prevent the cake from crumbling a bit during the icing of it.
