Ingredients:
400g/14oz dried spaghetti
175g/6¼oz piece smoked pancetta rind removed
2 tbsp extra virgin olive oil
3 garlic cloves, finely chopped
handful flat leaf parsley leaves, finely chopped
3 large free-range eggs, beaten
50g/1¾oz pecorino sardo maturo (mature Sardinian pecorino)
finely grated salt and freshly ground black pepper to taste
Method:
Bring 4.5 litres/8 pints water to the boil in a large saucepan with eight teaspoons salt. Add the spaghetti and cook for nine minutes, or until al dente.Meanwhile, cut the pancetta into lardons (short little strips), about 6mm/1¼in wide.Heat a large, deep frying pan over a medium-high heat, add the oil and the pancetta and fry until lightly golden. Add the garlic and parsley and cook for a few seconds, then remove from the heat and set aside.Drain the spaghetti well, tip into the frying pan with the pancetta, garlic and parsley, add the beaten eggs and half the grated pecorino cheese and toss together well.Season to taste with a little salt and black pepper. The heat from the spaghetti will be sufficient to partly cook the egg, but still leave it moist and creamy. Take to the table and serve in warmed pasta bowls, sprinkled with the rest of the cheese.

There really isn't a right-or-wrong answer to the question of "Spaghetti sauce or spaghetti gravy?" Some people use the two words interchangeably. Others argue that spaghetti "gravy" is usually heavier, more than likely contains meat, and likely takes all day to make, while "sauce" is generally lighter, does not contain meat (as in a marinara sauce), and can usually be whipped up fairly quickly. The Italian side of my own family tends to use the term gravy more often, but our family recipes generally call for heavy, meat-based...gravies. On the other hand, when I am cooking at home and making anything outside of my family's three-meat concoction, I would be much more likely to use the word sauce.

Ingredients
Saute the onion and pepper. Cook pasta and drain. Add pepper, onion and bacon Add 2 eggs and stir over med heat until egg starts to cook. You don't want the eggs to become scrambled. It should be on the creamy side. Add pepper and parmesan to taste. PASTA: Mix the flour, salt and olive oil, then beat in the eggs, (a food processor, or a mixmaster does this very easily). When well combined, add all of the water. Work until this becomes a dough ball, and then knead for two minutes, stretching out the dough, and folding it. Put in a plastic bag, and store in the fridge for at least a half an hour. Divide the dough into four pieces, and run through the machine, adding flour (this is a good place to work in some semolina) so that the dough is not sticky. After kneading on the widest setting for about 10/15 passes, reduce the size of the roller one step at a time until you reach the thinnest size. Put through the cutter of your choice, and dry on a rack or a line. Use fresh, or freeze unused portions. Easy, and quick and impresses the hell out of your guests! I sometimes add thyme, or oregano to my dough when mixing (about 2 t) and this adds nicely to the taste of the dough.

Bring large pot of water to boil. Coarsely chop the tomatoes and onion. In large skillet, warm the butter and oil over medium-high heat until the butter melts. Add the onion and garlic and saute until the onion just begins to brown, about 3 minutes. Stir in the flour, and cook, stirring until the flour is no longer visible, about 30 seconds. Stir in the tomatoes, clam juice, salt and pepper. Bring the liquid to a boil. Reduce the heat to medium-low, cover and simmer for 10 minutes. Meanwhile, add the pasta to the boiling water and cook until al dente, 10 - 12 minutes, or according to package directions. While the pasta and tomato sauce are cooking, stem and roughly chop the fresh spinich. Bring the tomato sauce to a boil over medium-high heat. Stir in the clams and spinich and cook until the fresh spinich just wilts about 1 minute. Drain the pasta and toss it with the sauce and 1/3 cup of the parmesan. Pass remaining parmesan on the side.

Cook the pasta until almost *al dente*; add the arugula, cook for a few moments & then drain. Meanwhile, lightly saute the shallots or garlic in the olive oil. Add the tomatoes. Cook over high heat until the sauce thickens, then season with the salt & hot pepper flakes or cayenne. Toss the pasta & arugula with the tomato sauce & serve immediately. VARIATIONS: Add the arugula to the tomato sauce rather than the pasta. Use wholewheat pasta instead of spaghetti & broccoli tops instead of the arugula. This will need more red pepper flakes. Finish with a sprinkling of fresh herbs such as basil or oregano.

No, you're a troll who can't even write in decent English. Get a life. Just to straighten you out, I'll amuse myself here. The 'correct answer' is:
"Spaghetti Bolognese" is the popular form of "Ragu alla Bolognese", which is a meat sauce from Bolognese, Italy.
"Spaghetti bolognaise" is the bastardised form of "Spaghetti Bolognese" and is more like a tomato sauce with ground beef and various vegetables. "Bolognaise" holds no particular meaning, but non-Italians tend to pronounce 'ese' as 'aise' so there you go.
And yes, it is then shortened to "spag bol". Though it is not official, considering there is no official cuisine which recognises "Spaghetti Bolognaise". If you really want a nickname, then "Ragu alla Bolognese" is often shortened to "Ragu Bolognese".
So back to the troll: get a life. You probably asked the question yourself anyway.
EDIT: I'll even take it a step further: the whole "spaghetti" thing isn't recognised in Italy either, considering it is always eaten with tagliatelle and not spaghetti. So even "Spaghetti Bolognese" actually isn't recongised anywhere officially. You have the unofficial "Spaghetti bolognaise" and the official "Ragu alla Bolognese". And that's all.
