The Japanese writing of sashimi is 刺身 made from the Kanjis 刺 (toge/ira) which is like thorn/splinter, and 身 (mi) which is like body/oneself. So the name really doesn't have anything to do with "raw fish", although sashimi is sliced raw fish served with a dipping sauce, so it is possible for it to be translated as "sliced raw fish". However, I think if you wanted to just talk about "raw fish", it is 生の魚 (nama no sakana).

Yes you can. It may not taste as good when you defrost it, but you can freeze it if you must. Sashimi (raw fish) can easily be frozen and thawed and still maintain the same taste and "freshness". It's actually required that sashimi be frozen and thawed prior to serving to kill parasites.

Safety is relative, all raw foods carry a level of risk, but the risks are much higher for non-sashimi grade fish. First of all, sashimi grade is frozen very quickly after the fish is killed to preserve the flavors and freshness. The freezing process is also done in a way to kill any parasites. You have no idea how long it was until market grade fish was kept until or after freezing. Plus there is a big difference in the taste. The fish is quickly killed to prevent build-up of acids in the flesh for sashimi grade to protect the subtle flavors.
In my opinion, it's just not safe all around. Spend the extra bucks and get sashimi grade.

If you dislike fish stay away from the sashimi as it is nothing but pure fish...no rice, nothing.
For sushi i would recommend "California rolls" (crab and mayo), "vegeterian rolls" (cukes and advocados usually) and some places will have sushi with steak rolled inside (obviously not traditional). And you can never go wrong with "dynamite rolls"!
