Post- op stands for post operative. This is the time immediately after a surgery. A doctor will give instructions for this time that will help the patient to recover from the stress of surgery.
Some patients may be able to rest at home, some in the hospital only. It is up to the doctor.
Another use of the word post op is slang. Sometimes people who have had a sex change are called post op to distinguish them from people who live dressed as a different gender, but who have the same sex organs that they were born with: a post- op.

The surgeon performing your gastric bypass surgery should go into very detailed explanation of what your diet would be after your surgery. If they don't, find another surgeon. To get an idea if you want to consult a surgeon, try the site http://obesitycontrolcenter.com/our-program/our-follow-up-program/gastric-bypass-post-op/ to see if you would be able to follow the post op diet restrictions.

Post means after (pre is before), and op is short for an operation (surgery), so it refers to a transsexual person who has had the corrective surgery. Transsexuals are not transgendered, but even if they were, they would stop being transgendered after the surgery, and would be social and legal members of their corrected sex.

A post-op transsexual refers to a person born with transsexualism who had their condition corrected with surgery. So the transsexual woman is just a woman afterwards. Likewise, the TS man is just a man.
A pre-op TS is a person who was born with transsexualism (who is not merely transgendered) who will someday get the surgery.
There is also a non-op TG who people often mistakenly call a non-op TS. That is a man who lives as a woman, or a woman who lives as a man, and who intends on never getting surgery. They are likely not transsexual at all. That is not the same as a pre-op TS who is living in poverty or who is in bad health. The fact they would get surgery if they could would make such persons pre-ops.
