Depends on the size of the bakery you are working for. I have worked at a bakery in a hotel in las vegas. it was working from about 11pm (when the gourmet restaurants closed) to about 7am or when the work for the day got done. We serviced three gourmet rooms the coffee shop and Chinese restaurant and a buffet. As for the conditions in the bakery ... with volume we had to put out each it could be very dangerous working around the large mixers and ovens and other various equipment. With the ovens going full blast all night it could get very hot in there even though the bakery was in the basement and up against an outside wall. Another thing that makes or breaks a bakery job in my opinion is the people that you work with... We at the hotel had a very nice and understanding head chef that wouldn't care what was going on as long as the work got done and nobody got hurt. So that made it bearable.

Some good bread ovens are brick ovens because of the even heating. Convection ovens also work well, one brand in particular that has received high remarks is the Sharp Healsio convection oven.
yes it actually does work I use it on my horses all the time!
Some locks on ovens just have to be slid to the other side in order to work. Newer ovens, have buttons that you push in order to lock the oven.
I would rather be an Artist who hangs their work on the walls of their successful bakery. ;]
