Chilaquiles are Yummy!
Crack a few eggs in a bowl and scramble. Pour into a skillet with strips of corn tortillas. Before its done cooking dribble some and red or green salsa in and gently mix. Serve piping hot with a bit of crema poured on top andd/or a bit of crumbled Mexican cheese. We usually like them best with frijoles (refried beans) and this is usually eaten for breakfast.
