Because France is sort of a laic country when it comes to education. No one is allowed to practice anything inside school or show any sign of any religion. Although this could be highly (and was) criticized because how are we suppose to show our diversity if we can't show our religion? Especially when you're at school. they didnt ban the hijab everywhere, only at school.
