The Viking "religion" (better described as a tradition) happens to still be alive today, in the form of Asatru.
What it comprises of is of course Honoring the Gods and Goddesses of the Aesir and Vanir, but also a mindset, to be as honorable a person as one can. Relying on yourself, being generous and hospitable, and being honest.
The religious activities included celebrations for the major holidays that fell around the solar equinoxes and solstices, and harvest festivals in between. This included animal sacrifice, and festivals. A more in depth article can be found here: http://en.wikipedia.org/wiki/Norse_paganism
