In Greek, The Bible became readable by many, many people, not just the ones that could read Hebrew. That was important, as Greeks comprised a large portion of Christians, then.

Also, some parts of the Bible were mistakenly translated as scholarly Greek, (After all, it WAS God's word) but were really written in the common Greek used by regular people. This led to subtle misunderstandings that had a large impact in the meaning of those writings. The Gospel according to Luke is an example.

Luke is also an example of "who wrote this?" Was it Luke? ennnhhhh . . . . . was it his traveling companion, Apollos? Um, maybe. Was it the early Catholic Church? Very likely. (This would have been at that time when the Church was deciding which gospels fit their idea of Christianity, and is also the time when the other 45 or so gospels were deleted from the Bible writing of the time.)

Greek became the only language besides Hebrew in which the Torah may be read (Talmud, Megillah 9a); and the Torah became accessible for the first time to non-Jews.
