As Transubstantiation is a divinely revealed dogma of the faith, we are unable to justify it, in the same way that I am unable to justify to you that Jesus Christ is alive and well, two thousand years after having died on the cross. However, I know that Jesus is alive as I know Jesus as I have a personal relationship with Him. In the same way, Jesus has revealed to those who believe in Him, through His Church, that He is in the Blessed Eucharist. I know this, as well, as I receive Him several times a week, personally, in Holy Communion. However, the only proof that I can offer to you that I do receive Jesus in the Eucharist is the way I live my life - that justifies my belief - it demonstrates and proves that Jesus is in the Eucharist through transubstantiation. So to answer your question, look at the lives of the saints, at all of those Catholics who have led saintly lives and gave up their lives for their savior, that is how we justify our belief in transubstantiation.
