After the Roman conquest of Egypt, the ancient Egyptian religion began to adapt to the Graeco-Roman belief system. Then, during the rapid expansion of Christianity during the fourth century, many Egyptians converted to Christianity. The end of Egyptian paganism finally came after 391 CE, when public worship of pagan gods was prohibited.
The Ancient Egyptians didn't 'die out'; their political system, as well as their faith and many aspects of their culture, ended because of the influences of the Roman and Byzantine empires.

Pagan temples were seized or destroyed (see the 4th century christian riots in Alexandria). Pagan activities like the ancient Olympics were banned. Pagan centers of learning were closed (like the academy in Athens)
Over the next two centuries non-Abrahamic religions largely disappeared from Roman controlled parts of Europe. During most of the middle ages public displays of Pagan rituals were punishment by death. However the last known records of organized pagans in the Greece actually date as late as 10th century Laconia. After that period there are occasional sporadic records of individuals declaring themselves followers of the ancient Greek religion (see 15th century neo-platonic Byzantine philosopher Gemestus Pletho) but no organized Greek pagan religion per se.
After its liberation from Ottoman rule, the modern Greek state (largely Christian today) legalized other religions. This also opened the door for paganism to become legal again in Greece. Since that time there has been a small but growing organized Hellenic Polytheistic Recontructionism movement in Greece (based on actual practices from early forms of the old Greek religion). Recently Greeks that are followers of the old Polytheistic religion have sued the Greek state to be allowed to perform rituals in ancient temples.
ancient Egypt ended when it was captured by the Greeks, and Ptolemy was on the throne(well, this was when the last Egyptian pharaoh was gone, so it was the end of Egypt being ruled by Egyptians).
In the mind of most people, however, Ancient Egypt ended when Cleopatra vii committed suicide( or died, there is no actual records of her killing herself).
