Dried fruit will in the end also decompose, otherwise you could eat it forever. But to help the process along, water is an important element. If you throw a few pieces of dried fruit in a barrel with other organic matter, the water contained in that matter will already do the trick. In a barrel with only dried fruit, adding some water might be useful.

Yes, apples can be composted. Also, if they have not begun to decompose, they could be made into cider, and the pulp remaining can then be composted. This means the juice is not wasted.
