Airplanes do not "defy gravity", any more than you do when you walk upstairs.

In both cases, an upward force is generated that is greater than the downward force

of gravity on an object. Since the net force on the object is then upward, the object

accelerates upward.

Airplanes create lift by generating higher air pressure below the wings and lower air pressure above them. This pressure difference allows the plane to overcome gravity and stay aloft. By controlling the speed, angle of attack, and shape of the wings, pilots can maintain lift and altitude during flight.
