Plants on earth have adapted their photosynthetic pigments to be the most active in that frequency of light from the sun that has the most abundant energy to offer. The sun does emit high energy radiation but very little of it. Most of the radiation above the Ultra-violet is shielded by the Earth's atmosphere anyways so there is no use going after that. There is lots of energy in the lower UV that does make it to the surface of the Earth (as any sunburned sunbather will attest) but there isn't very much of it. The most abundant light from the sun is in the yellow range and that is the colour range that plants primarily exploit.
