The spinning of the motor will generate an electromagnetic field which will generate a current in the copper wires within the motor, this current is then fed out of the motor and into a generator which usually contains a transistor which will convert the DC power of the motor into AC power, which can then be adjusted as needed and fed into the power grid for the city or local area.

By the way, "hydroelectricity" is electrical energy. The "hydro" part just means the above method was used to generate it.

At night, when demand falls, the power-station reverses its role by taking electricity from the main, base-load power-stations to pump the saved water back up to the top reservoir. Obviously there is a net energy loss in its own operation, but it helps maintain overall Grid efficiency by smoothing out the peaks and dips in demand.


Well there's several ways I've seen it done, but most popular is water passing through turns some type of water wheel, which powers a generator of some type. I don't know all of the specifics, but that's the jist of it.
