Sort of. The Moon doesn't jump in between the Earth and the Sun; the Moon moves normally, and gradually hides the Sun, so there is a sort of "twilight" or period of partial illumination. Many people comment that it looks very much like twilight, in that it gets slowly darker - even though the sun is still high in the sky!

In fact, birds and animals have been observed to return to their nests and burrows as if the sun were setting.

Twilight occurs before sunrise and after sunset when the Sun is below the horizon. A solar eclipse takes place when the Moon comes between the Earth and the Sun, blocking the sunlight. While twilight is related to the position of the Sun in the sky, a solar eclipse is caused by the alignment of the Earth, Moon, and Sun.

Will an eclipse occur every time the moon is passing through a node?

No, an eclipse will only occur when the moon is passing through a node if it also aligns with the Earth and the Sun in a specific way. This alignment is what creates the conditions for a solar or lunar eclipse to take place.

Why doesn't a solar eclipse occur during each full moon?

In the first place, solar eclipses happen at New Moon. Apart from that, the Moon has an orbit that is inclined to the plane of the Earth's orbit, and an eclipse can only occur when it is crossing that plane. If it is not, the Moon passes above or below the Sun and there is no eclipse.
