Oil is hydrophobic or 'water-hating'. It doesn't mix with water so when the water goes away, the oil doesn't follow. Soap, on the other hand, mixes with the oil so when it goes away so does the oil.

Greasy foods contain oils that repel water, making them difficult to dissolve in water alone. Water-based cleaners often cannot break down oils effectively, so a detergent or soap specifically designed to break down and remove grease is usually needed for effective cleaning.

Why is it difficult to clean grease stains on clothing with water alone?

Water alone is not effective in breaking down grease because water and oil do not mix. Grease is non-polar, meaning it repels water. Therefore, using just water to clean grease stains on clothing will not effectively remove the grease molecules from the fabric.
