the restriction enzymes allow you to cut out specific DNA sequences. For instance, if you have a gene (a gene you want to cut out) with AGTTC and GCTAA border sequences, you take two restriction enzymes which recognize these small sequences (these enzymes will make a cut inside the sequence), and voilá, the gene is free from the rest of the DNA and you can work with it separately.
