Diffusion in plants occur when the plant need to respirate, that is, exchanging gases from its inside, with gases of the atmosphere. In respirations, there's mainly exchange of oxygen, carbon dioxyde and and water steam. For every organisms water is on of the most important molecules, if plants lose their water, they could die. So, they prevent this dessecation by exchanging gases exclusively at night, when temperatures are lower and water can't evaporate and diffuse out of the plant.

Also notice that plants respirate by their leaves with a cell arrengement called stomata.
