In a water molecule, two hydrogen atoms are bonded to one oxygen atom through covalent bonds. The oxygen atom attracts electrons more strongly than the hydrogen atoms, causing a slight negative charge on the oxygen atom and a slight positive charge on the hydrogen atoms. This creates a polar molecule with a bent shape.

A hydroxide is taken from the glucose and a hydrogen is taken from the fructose. This leaves the glucose and fructose a place to bond. A hydroxide(HO) and a hydrogen (H) make a water molecule (H2O)
When certain molecular crystals are added to water, they are able to dissolve and break down into their original molecules, if they are affected by the interatomic hydrogen bonds that water induces. A simple answer: dissolving.
