Earth's crust makes up only about 0.4% of the total mass of Earth, and that includes the mountains. The greatest impact is on climate and weather; mountains block wind flow, cause updrafts and so rain (on the landward side of mountains one gets 'rain shadows'). Streams from mountains have higher energy so erode more rapidly, especially if the lower slopes are deforested by humans. High mountains allow for snowfall which may lead to the formation of glaciers. So a simple question has many and varied answers.

Over geological time, rivers have a vast effect of geomorphology (the shape of the earth's surface). The Grand Canyon is an example of the effect of a river carving down through a plateau.
