It's just pressure, cork in a bottle. Either water comes in contact with the magma creating steam or the magma itself bulids to the point it explodes, the pressure in either case becomes more than the rock containing it can stand and it blows up.

Volcanoes can explode due to the buildup of pressure from gas and magma within the volcano, causing an eruption. This pressure can result from a blockage in the vent, leading to an increase in pressure that eventually overcomes the strength of the volcano's walls, causing an explosive release of volcanic material. Other factors such as the composition of the magma and the presence of water can also contribute to explosive volcanic activity.
