the enzyme found in gastric juice is Pepsinogen

and it only works in an acidic environment (hydrochloric acid is in the stomach)

then when that enzyme gets mixed with the hydrochloric acid it creates pepsin and pepsin breaks down proteins into amino acid chains

there are also other enzymes like:

  2. Renin
  3. Pepsinogen
  4. Gelatinase
  5. Gastric Amylase
  6. Gastric Lipase
