Great question! Some species only go through anaerobic respiration. The best and most common example is yeast. Most organisms that go through anaerobic respiration are unicellular. Multicellular organisms can't function through fermentation as it is not very efficient. They cannot get away with that when there are multiple cells to feed and there is only so much glucose.
