I am proud to say that I grew up in cajun country - Lafayette, Louisiana. My grandmother spoke cajun french, and I was surrounded by incredible food growing up. Food is a lifestyle down in cajun country. Festivals, parties, tailgates, you name it. Point being, much of the great food we all enjoy in cajun country is not "restaurant food" prepared by a "chef." It's the food made by moms, dads, paw paws, "parrains", caterers, the fisherman getting off the boat, the old lady down the street taking care of your cripple grandma, etc. Though people love to dine out here in cajun country, the atmosphere isn't quite like what you might get in a city like New York or Chicago or Seattle or New Orleans where diners go out on a journey to try out a certain chef.
Having said that, I'll offer you up what are probably the three most famous, in no order: Paul Prudhomme, John Folse, and Justin Wilson.
But again, just keep in mind, this does not mean these famous guys are the best. 20+ years in South Louisiana and New Orleans and the best cook I have ever known in my life - BY FAR - is a big ole woman named "Miss Doris" that took care of my grandmother in her final years of life. I would put her food up against any millionaire famous chef.
Thats how things are down here - everyone has their own version of a "Miss Doris". And thats where we go to get our great food. Not the "chefs" - good as they are themselves.
