A common top wood is either ceder or spruce and often have mahogany necks backs and sides. More recently, guitars have been made of laminate woods and composite materials. Laminate woods are cheaper and don't produce the same quality if sound but are decent as long as the guitar has a solid top. Composite guitars of carbon fiber are naturally more expensive.

In theory, you could use any solid material. Metal, iron, wood, plastic. But wood resonates, and that's why guitars are (normally) made out of it.
