Probably the mask which symbolises the Phantom himself hiding behind his mask both literally and symbollically. The Phantom uses his mask to hide his deformity but he also through the mask is able to symbollically pretend to be both Christine's Angel of Music but also a supernatural figure when he is nothing but a man. Albeit a genius.
The rose is the second. The rose has many connotations. In the world of the theatre and Opera roses are thrown on stage by the auience as a sign of appreciation. So it links to the idea of fame and performing. Also at one point in the musical the Phantom and Raoul give Christine roses so it is also used to represent the love triangle between the three characters. It also is symbolic of beauty and innocence that Christine portrays in comparison to the Phantom which helps make the story more of a gothic "beauty and the beast" tale.
The third is probably the monkey music box/the mirror. Depending on what interpretation of the story you're going for. If you're looking at the book, and the early film versions the mirror is probably the thirs symbol as it links to the play's theme of deception and things not quite being as they appear. In the 2004 film version of the musical after Christine and Raoul leave the lair, the Phantom destroys all his mirrors which symbolises him letting go of his old life, his true love and his possible redemption. In the stage musical and 25th anniversary I'd say the monkey music box as it links to the innocence both of Christine as it is used to wake her up after music of the night when she first unmasks the Phantom. It also links to the childlike innocence of the Phantom himself as in the end he is seen kneeling beside it and singing to it's childish version of Masquerade. It could also be a testament to the power of the Phantom's genius as he presumably designed it himself and the power of his music in general and it's ability to control others from Christine to the managers.
