The pitch a guitar makes is totally dependent on how it is tuned and where it is played. But in standard tuning the lowest pitch of a guitar (Low E) as around 82Hz and the highest pitch (4 octaves above middle C) is 1050Hz. Cosidering the Human hearing range is 20Hz-20,000Hz, the guitar makes relatively low pitch sounds. It makes pretty much both low and high notes some keys are high notes and others are low.
Pitch of a uke is relevant to its type and tuning a soprano or concert uke is more highly pitched than a baritone uke, but a baritone uke is exactly the same pitch as a guitar (if they're both on standard tuning). Whereas a guitar is higher in pitch than a double bass.
I think many people get mixed up between tone and pitch. I would consider ukes to generally be mid ranged instruments - strange though how for some reason banjo ukes generally appear to be higher pitched, perhaps that's because most players try to accentuate the higher notes.
