Star Trek (the Original Series) has Dr Leonard "Bones" McCoy, played by DeForest Kelley. In the original pilot, however, it was John Hoyt who played Dr Philip Boyce.
The Next Generation in seasons one and three thru seven has Dr Beverly Crusher, played by Gates McFadden. Dr Katherine Pulaski (Diane Muldaur) appears in season two.
Deep Space Nine has Dr Julian Bashir (Siddig El-Fadil, later known as Alexander Siddig.)
Voyager has the "Emergency Medical Hologram" (EMH for short). He later chose the name "Joe". The EMH is portrayed by Robert Picardo.
