Jesse told Winnie that the water is dirty as it comes straight from the ground and would not be good for her to drink. But this was not the real reason why. The actual reason was that Winnie would become immortal like Jesse by drinking from the spring.
No, because Winnie in her entire life she has always been rerserved and guarded her family did not allow her to have her freedom, she was always told what to do. When Winnie met Jesse he was the complete opposite of how her life was, he was laid-back, he had the opportunity to whatever he wanted, he was fun and most all of he was a free spirit. He had the life Winnie so desired, as she got to know him better she develops from a interest to a crush to him, just like any young girl she woud develop a crush. In the story it also mentions how beautiful Jesse was in Winnie's opion, that also is another reason why I wasn't surprised of Winnie's interest in Jesse
