The Roquefort is made in Roquefort-sur-Soulzon (link) in the southern French departement of Aveyron, itself in the administrative region of Midi-Pyrénées (regional capital: Toulouse).
The cheese is a regional and national treasure. Charles the Great requested the local bishop to send him two crates per year, to his palace in Aix-la-Chapelle (nowadays Aachen in Germany), a three-week horseback ride away.
