I don't know about the itouch exactly, but some good practices for battery management are:
1) Turn down the brightness. Often, the greatest current draw in a device is the screen.
2) Charge the battery fully before unplugging the charger.
3) Adjust the devices built in power settings to 'max battery life' or similar. (again, this may not be an option on the itouch, but most devices have power options nowadays)
4) Don't let the device get too hot. Heat frequently effects battery chemistry, usually in a negative way. I've seen too many laptops that have overheating and power problems.
5) Don't let the battery drop too low on charge before recharging. Letting the device die before it gets a charge really stresses the batteries.
I can't say that these will make a major change or drastically improve battery life, but they will help preserve your battery's lifetime power retention.
