We do use Roman numerals today. For example, Roman numerals are often found in making outlines; to label book chapters; to label the frontmatter (pages) in books.
Modern Romans use Roman numerals about as infrequently as the rest of the western world. Arabic numerals was much easier to use for all purposes, so the old Roman numerals are used only in formal notices like foundation stones, and often, not even then. That included commercial transactions, accounting (such as it was), calendars, etc.
Because many peoples in many countries are not knowing Roman numerals, so we didn't use Roman everywhere.
